The Conquistador Margarita


The Conquistador Margarita | Drink Recipes | Culinary CompostThis just might be my favorite margarita drink recipe. The grapefruit and lime juice balance well with the sweetness of honey or agave syrup. I prefer to use honey — it’s a bit more healthy for you, but be aware that it will gel when it hits the ice due to its higher viscosity. The agave syrup will mix better and tends to be sweeter, so you may want to use less.

Plow through two of these and you’ll be able to single-handedly take on the nearest bullfight or windmill. Enjoy in moderation!

INGREDIENTS:

6 oz. premium reposado tequila (see my notes below)
The juice of one fresh-squeezed grapefruit
The juice of two fresh-squeezed limes
3 tbs. Madhava® light organic agave syrup or honey, to taste
3 cups small ice cubes

DIRECTIONS:

Squeeze the citrus through a strainer to ensure there are no grapefruit seeds or pulp in the rendered juice. Place the contents in a 1-quart mason jar with a tight-fitting lid. Shake vigorously to dissolve the honey or agave syrup. Strain into two margarita glasses, taking care not to chip or break the glass with the ice. You may salt the rim of each glass if desired. Tequila blanco may be used, but i find the character is more refined with a premium reposado.

Makes 2 high-octane drinks.

Mike’s Tequila Recommendations for Mixed Drinks:
For the price, (all can be had for under $36 dollars) you can’t beat any of the following reposado tequila brands (in order of my preference):
• Corazon (superb flavor profile for the price — my go-to tequila)
• Prospero
• Tres Agaves
• Teremana (Duane “The Rock” Johnson’s brand)
• Arette

Try Yuu Baal Espadin Mezcal (around $39 dollars) as an alternative to reposado. An excellent mezcal tequila at 48% alcohol — Mexico’s answer to Scotch whiskey. The clear (blanco) espadin actually blows away their reposado version, having a much more complex flavor profile and higher proof straight from the distillation pot.

All of these tequilas will compete head-to-head with much more expensive brands like Herradura. Why is Patron not on my list? Patron is overrated and over-priced. (In Mexico they laugh at tourists who order it.)

Now, my go-to premium sipper? Don Julio all the way.
