Grilled Potatoes

A variation on the classic “Hobo Dinner;” easy to prepare and almost no cleanup!


5 potatoes, scrubbed and thin sliced with skins left on
1 onion, sliced
6 tbs. butter, cubed
1/3 cup shredded cheddar cheese
2 tbs. minced fresh parsley
1 tbs. worchestershire sauce
salt and pepper to taste
1/3 cup chicken broth


Place the potatoes and onion on a large sheet of heavy-duty foil.  Top with butter. Combine cheese, parsley, worchestershire sauce, salt and pepper and sprinkle over potatoes. Fold up foil into a boat and add the chicken broth. Seal foil and fold over edges to prevent tearing.

Place in a charcoal grill with coals heated to medium (direct heat, or placed to one side to accommodate other food) and cook covered for 30-35 minutes until tender.

Serves 4-6
