Kentucky Fried Chicken has gotten plenty of bashing through the years for their less-than-healthy menu selection, but you know what? I love fried chicken and I’d take their yummy coleslaw over a side of McDonald’s grease-sticks any day. Their coleslaw is pretty stellar actually. The spicy Twister wraps are great too, but I digress…
I found this version (among many) on the internet and I must say it is almost dead-on true to the original. I think you’ll agree. Just make sure you marinade it overnight in the fridge. This is the key.
8 cups shredded cabbage
1/4 cup shredded carrot
1 cup milk
1/2 cup mayo
1/3 cup sugar
1/4 cup buttermilk
1/2 tsp. salt
1-1/2 tbs. white vinegar
1/8 tsp. fresh-ground black pepper
2-1/2 tbs. fresh squeezed lemon juice
Run cabbage and carrots through food processor with coarse shredding blade. Put aside in fridge to chill.
Mix other ingredients completely in a bowl using a wire whisk for 2-3 minutes.
Add mixture to cabbage and carrot and stir to incorporate.
Allow to marinate covered in fridge for at least 24 hours before serving. Will keep for two days.
