Shish Taouk Lebanese Chicken


This is a Lebanese favorite served in many variations. Throw caution to the wind and try substituting shrimp or lamb.

Ingredients:

Garlic
Lemon juice
Extra-virgin olive oil
Salt and pepper
Rice

Garnish with:

Chopped fresh parsley
Red onion – thin sliced
Lemon wedges

Preparation:

Cut chicken into one-inch pieces. Marinade in olive oil, lemon juice, salt and pepper for at least one hour. Three hours is ideal. Turn halfway through.

Thread chicken onto skewers and cook over charcoal. Brush to coat with the remaining marinade.

Serve over rice with chopped parsley, lemon wedges and red onion.


Moroccan Marinade Version:

Extra-virgin olive oil
Ginger
Paprika
Chili pepper
Salt

Garnish with fresh chopped cilantro leaves.
